Description

Quality Sparkling Wine, Metodo Classico S.A.
SAKURA 2015 – DOUBLE GOLD MEDAL
(JAPAN WOMEN’S WINE AWARDS)

Type

White quality sparkling wine, Brut

Grape varieties

Made from a blend of Chardonnay and Pinot Noir (vinified as a white wine) grown in our hillside vineyard in Riccò di Serramazzoni (Modena), at 650 metres above sea level on the Modena side of the Tuscan-Emilian Apennines.

Harvest period

First week of September

Vinification method

It is made through the careful vinification of the finest grapes, harvested exclusively by hand in 15 kg crates. The clusters are handled with care to prevent any damage during transport and arrival at the winery. The grapes are gently pressed and only the free-run must is fermented in temperature-controlled steel vats. In the following spring, the sparkling-wine process takes place according to the traditional Metodo Classico of refermentation in the bottle. After resting for at least six months, it is supplemented with carefully selected yeasts and bottled. Once refermentation is complete, the bottles remain lying down for more than 24 months. The long maturation on the yeasts enhances the wine’s characteristics and gives it greater complexity.

Description

A structured, full, intense wine with a fine, uninterrupted perlage. Pale straw-yellow colour with greenish tinges. The aromatic profile is rich in citrus notes with hints of yellow-fleshed fruit. On the palate it is fresh, with pleasant mineral notes and an elegant drinkability. Clean finish and good persistence.

Alcohol content: 12.5% vol.
Serve at 8°C.
