Vinification method

The Blanc de Noirs is made from the soft pressing of the finest Pinot Noir grapes from our hillside vineyard in Riccò, strictly hand-harvested in crates. Only the free-run must is fermented in temperature-controlled steel vats. In the spring following the harvest, the sparkling-wine process takes place according to the traditional method of fermentation in the bottle, at a constant temperature. The bottles remain in maturation for at least 60 months, so that the wine can express all its complexity. This is followed by dégorgement (disgorging) and the addition of the liqueur d’expédition.

Organoleptic characteristics

Colour: golden-yellow robe with amber tinges.
Aroma: an imposing and evolved nose. Fruity aromas with notes of yellow peach and apricot, combined with spicy fragrances.
Taste: a complex wine with the right balance between liveliness and vinosity. It creates an unusual mood: youthful and refreshing, complete and mature, in stable equilibrium between its two faces. A finish illuminated by the aromatic perceptions that have emerged, varied and persistent, with strong personality.

Alcohol content: 12.5% vol.
Serve at 8°-10°C.
